I don't know what this dish is called other than a bacon appetizer log. I heard guys on sports radio describing it so I had to try it out. 

You start with a pound of raw bacon that you weave into a mesh much like the old lawn chairs from the late 60s.  You then put down a layer of pancetta over this . Then take your favorite raw sausage remove the meat from the casing and spread it over the the pancetta.  You then roll it up like a jelly roll and cook it on indirect heat on a charcoal fire for about two hours. 

it really tastes great.  although one basic rule of life is everything tastes better wrapped in bacon.
