Okay, I've been slacking. Sorry!!!

This is a simple baked salmon. I made it with Sockeye this time (thanks for the prior suggestions). It makes for a great dish, and is really simple.

The suspects:

a few tbsp olive oil
2 cloves minced garlic
1 tsp dried basil
1 tsp dried parsley
1/2 tsp salt (I always use Kosher)
1/2 tsp black pepper


Mix it all together and marinate for about an hour. I kept mine in a zip-top bag during the marination. Here they are ready for cookin'



I also made a side of wild rice with roasted garlic and olive oil - ok ok ok; it's Uncle Ben's brand, but heck, its goooood.



Bake the filet's, covered, at 375F for about 30 minutes. While they are baking, don't forgot to make the best use of your assistant chef. Wait, there the heck is he? Oh, there he is playing the piano - THANKS assistant.



Get the filet's, plate 'em, serve the rice and a veggie. YUM YUM!!!
