Been putting the Jenn-Air to use lately. I had the munchies a while ago so I grilled up some fresh (well frozen, but not smoked or cured) deer sausage. Did up a couple packages for the kids and I . One was JalapeƱo and Cheese and the other was Green Onion. No special preparation or fancy plates. Just a knife and fork and a paper plate when they were done.

Onkel C wrote: Never had deer sausages before, could you describe the taste, please? Deer and Elk sausage is great. My grandfather on mom's side made both. It is very lean and he always mixed in a little pork to hold it together better. It is a little stronger tasting than beef, buffalo or lamb. If cleaned right you can almost remove all the gamy taste too. Just have to make sure the hair dose not touch the meat when cleaning. Something about the oils in the hair. But Onkel the venison sausages are awesome! ;)

Skipdawg nailed it. They butchered this one right. It was not "gamy" at all. Probably one of the best batches of fresh deer sausage I have ever had. I haven't went deer hunting for years but when i did I would save the filet's, a couple roasts and would have the rest made into summer sausage as the curing and seasonings would cover the gamy taste.

Soak the venison in milk a few hours before cooking, it draws out the gamey flavor. Throw out the milk when done. That gamey flavor is also produced when the deer is in flight and has a high degree of adrenaline in its muscles when dispatched. A deer at ease when dispatched doesn't have as much of a strong flavor. I am Cajun related, hence my handle, and have cooked tons of ducks and other game where the milk helps out greatly.
