1st off, sorry I haven't posted here in a bit. Let's Cook!!! This is my sister-in-law's meatloaf recipe. When she told it to me, I thought she was kidding. Try it, darn good. Like good cooks, there are no measurements really, just all by feel. So I went the same way. 2 pounds beef, eggs, bread crumbs, grated cheese (romano), garlic powder, salt, pepper and any seasonings you like. Place 1/2 in a loaf container. Then, make a huge divit in the center and fill with any cheese you like (this is moozarella) Top with the remaining meat, and put veggies around it. I chose carrots and potatoes. (how'd that bird get there?) Poor a can or two of chicken broth on top, and cook. I covered for 20 minutes at 500F then uncovered for another 40 minutes at 400F. You may need to add more liquid as it cooks. While it cooks, look out for sharks: Top with the remaining cheese, cook a bit more, and enjoy!!! Enjoy!!!

Now that's what I call comfort food... course, I would double the amount of meat, after all it's 'meat and potatoes', not 'potatoes and meat'... heh... btw, want a good recipe for fricassee cockatoo? jk Marc... ;)

Looking good Marc! Thanks for sharing. The ground beef filled with cheese is a greek invention iirc, they call it "Bifteki" and use feta cheese for it. I tried it once, works out fine: Keep sharing, folks, it's gotten a bit lonely in here.

it was 2 pounds of beef; really shrunk down. Now the bird, her pre-cooked weight is about 1 pound.
