Carbonara is one of the basic italian pasta dishes, made from very few ingredients and prepared without much hassle. The whole sauce can be made while the pasta is boiling. You can use whole eggs for the prep or only the yolks (as I did), enhanced with some cream. These are the ingredients:

Pasta (preferably Spaghetti, but everything will work fine),
a handful of smoked ham or bacon cubes,
about 4 large eggs/yolks per 1lb pasta,
two handful of grated Parmesan, Grana Padano or Pecorino,
olive oil, half a can of cream (not pictured),
salt and pepper.

Start the pasta water, when you have the pasta in the water, grate the cheese and separate the yolks:




fry the ham/bacon cubes in some olive oil:


stir the yolks with some cream, salt and pepper the mix:




When the pasta is done, you gotta act fast and swift: pour the drained pasta into the skillet with the meat cubes, add cheese, pour the egg mix over it and stir the whole mess FAST!



DONE!
Serve sprinkled with some cheese:
