Skipdawg nailed it. They butchered this one right. It was not "gamy" at all. Probably one of the best batches of fresh deer sausage I have ever had. I haven't went deer hunting for years but when i did I would save the filet's, a couple roasts and would have the rest made into summer sausage as the curing and seasonings would cover the gamy taste.
