Soak the venison in milk a few hours before cooking, it draws out the gamey flavor. Throw out the milk when done.

That gamey flavor is also produced when the deer is in flight and has a high degree of adrenaline in its muscles when dispatched. A deer at ease when dispatched doesn't have as much of a strong flavor.

I am Cajun related, hence my handle, and have cooked tons of ducks and other game where the milk helps out greatly.
