Happy New Year Christian and congratulations on the new job! Sounds like a fantastic opportunity and a lot of fun. This dish looks scrumptious btw - interesting that you put the chicken right on the bare rack with the veggies underneath to catch the drippings (not to mention you found a way to give a chicken a breast enhancement...heh)
