 Do you ever use beer instead of the lemon.  I have special design infuser pan designed for use on the charcoal grill.  Fill infuser with liquid of choice stand the chicken on it and roast.  I usually use a hearty dark beer but cola and wine also work. Must now try lemon juice  Each gives chicken unique flavor and excellent moisture.
