Was wondering if you swapped the hands yourself?  I was thinking of doing the same.  I believe all you have to do to remove the crown and stem is push the small black button just above the stem, and gently pull out.

I also have a burgeon dial protector, (cheaper) hand puller and a set of hand setting tools.  I've done this on one of my Seiko divers before and it seemed rather straight forward.  Although, from lack of experience, I'm sometimes nervous about pushing the hands back on to hard, or not hard enough and having them fall back off.

Was wondering if you had any tips or suggestions in general, or specific to the Moray for accomplishing this without hopefully running into any issues?

Yes Sir, I changed them myself, not a big deal at all.  As far as removing the crown/stem you just push the little tab with the dimple in the center that is close to the stem, I don't recall it being black though ( I may be wrong). 

I'm sure you already know but when you are removing the hands make SURE that you get the tool completely under the hour hand before applying pressure or else you may damage the hands.  When it comes to re-installing the hands it's not any different than the Seiko (7S26 I know for sure), maybe even take a close up photo of the factory installed hands before you remove the hands for a reference.  Like you said, it's all pretty straight forward and with the tools you have and a little patience you shouldn't have any problems.  BTW, I have tinkered with the Sea Devil and as far as swapping hands it's exactly the same procedure.  Good Luck...
