Well, I have to give two answers too.  I couldn't make this decision unless and until I'm actually faced with it.  First choice would be my original Rolex Tudor 7928 Sub that was issued to me in 1963 while I was in the Air Force.  It's the rare pointed crown guard version with the gilt gold dial.  If not that one, then my Omega Seamaster Pro 2455.50 Two Tone.  Here they are:

My initial instinct is my Doxa T-Graph Pro, because I like a watch with pazzaz, I enjoy wearing that one now, in the summer, and I love big heavy watches.  But Orange is not a "one watch" kind of colour.   Also a solid choice is my Ball Alligator, but again, big and heavy.   Love it now, but not sure about 20 years from now.  Then there is the U1, very cool, but kinda wild and unique, so maybe not.

So I'd have to say the winner as my ONE WATCH FOR LIFE is my Sinn 103 St Sa Ar!!  It has a chrono, which I love, anti-magnetic which is great for longevity and accuracy, sapphire, not too big, not too small, chunky without being obese, classic look, solid bracelet, bezel for timing, could just be the perfect watch for me 20 years from now.
